Yellow maize
Yellow maize, also known as yellow corn, is a cereal grain that belongs to the grass family Poaceae. It is one of the most widely grown crops in the world and serves as a staple food in many countries. The distinctive yellow color of the kernels comes from a natural pigment called carotenoids, particularly lutein and zeaxanthin, which are beneficial for eye health. Yellow maize is rich in carbohydrates, providing a good source of energy, and it also contains essential vitamins such as vitamin A, B-complex vitamins, and some minerals like magnesium and iron.
Apart from human consumption, yellow maize is extensively used as animal feed and as a raw material in various industrial products. It is processed into items like cornmeal, corn syrup, corn oil, and ethanol. In many regions, it is also used to make traditional dishes such as tortillas, polenta, and pap. Due to its versatility and high yield, yellow maize plays a crucial role in global agriculture and food security.
